Fillets
Fillets are whole and skin-on. The 10 lb box costs $215. The 20 lb family box costs $410. The per-pound price drops on the 20 lb box.
A 10 lb box holds about seven to nine fillets. Each fillet is vacuum sealed. Cook a fillet skin down in a hot pan. The skin crisps. The flesh stays firm.
Fillets suit a household that cooks a whole fish piece at a meal. One fillet feeds a family at dinner. Leftovers flake into rice bowls the next day.
Portions
Portions are cut to single servings. The 10 lb box costs $235. The 5 lb starter box costs $125.
Thaw one portion at a time. Leave the rest of the box in the freezer. Portions roast in about ten minutes at 425°F. Portions also sear in a pan in less time than a whole fillet.
Portions suit weeknight cooking. One portion feeds one person. Pull out the count your household needs that night. Put the sealed packs in the fridge the night before.
Smoked sockeye
Smoked sockeye is ready to eat. The 1 lb pack costs $38. The 2 lb gift box costs $85 and is packed for giving.
Smoked sockeye needs no cooking. Thaw it in the fridge. Serve it cold on a board with lemon and capers. Flake it over eggs. Put it on bagels with cream cheese.
Keep smoked sockeye frozen until you want it. Refrigerate it after opening. Eat it within the time printed on the package.
How much to buy
Start with weight. A 5 lb box is a first taste. A 10 lb box is a season of salmon dinners for a small household. A 20 lb box is the family size.
Count meals before you count pounds. One portion is one meal for one person. One whole fillet is one meal for a table. A household that eats salmon once a week works through a 10 lb box across the fall.
Every box ships once, in August 2027. There is no second shipment that season. Order the weight your freezer holds and your household will eat.
Storage and thawing
Put the box in the freezer the day it arrives. Keep packs sealed until cooking day. Vacuum sealing keeps air off the fish. Air is what dries frozen fish out.
Thaw in the fridge. Move a sealed pack down the night before. Cook the fish the next day. Cook portions from the pack you thawed. Leave the rest of the box frozen.
Ordering and delivery
Ordering is open now. Ordering closes at the end of June 2027. The sockeye season runs in summer 2027 in Bristol Bay. Boxes ship in August 2027, after the season ends.
Door delivery is $29 per order. Spokane pickup is free. Pickup orders are ready in Spokane in August 2027. Boone confirms the pickup spot by email. Boone confirms pickup hours by email.
The fish in every box is wild sockeye. Joseph Montecuco fishes out of Igiak, Alaska. The catch is flash frozen soon after harvest.
Fillets and portions cook differently
A fillet is a whole side piece with the skin on. The skin shields the flesh in a hot pan. Cook a fillet skin down for most of its time. Flip it once, at the end.
A portion is a single serving with no table carving. Portions roast evenly on a sheet pan. Portions suit a weeknight count. Cook two portions for two people. Cook four for four.
Both cuts come from the same fish. The choice is shape, not quality. A household that cooks for a table picks fillets. A household that cooks for a headcount picks portions.
Freezer space
The packs stack flat. A 10 lb box of fillets stores in a row along one freezer wall. A 20 lb box takes about twice that room. Clear the space before August 2027.
Portions stack in a pile by count. Pull one pack from the top for a meal. The pile shrinks across the fall and winter. Smoked packs store flat as well.
Keep the packs sealed in the freezer. Thaw one pack at a time in the fridge. Cook that pack the next day. The rest of the box waits at frozen.
Questions before you buy
Is any of this farmed?
Boone sells wild sockeye only. The fish are caught in Bristol Bay. No farmed salmon goes in a Boone box.
Can one order hold two different boxes?
Yes. Add each box to the cart. Checkout charges door delivery once per order. The $29 covers the full order.
When does my fish ship?
Every order ships in August 2027. The season ends first. Pickup orders are ready in Spokane that same month.
One fish, one bay
Every product on this page is the same fish. Bristol Bay sockeye is the only salmon Boone sells. The boxes differ by cut and weight. The source stays Igiak, Alaska, and the fisherman stays Joseph Montecuco.
That focus keeps the page short. A buyer picks a cut, a weight, and a delivery method. The order then waits for one summer season and one August shipment.
