Pan-seared sockeye, skin down
Dry the skin, salt it, and set the fillet skin-down in a hot pan with a little oil. Leave it alone for six minutes. Flip for thirty seconds. The skin should crackle when a fork taps it.
Three ways to cook Boone sockeye. Times are on each card.

Dry the skin, salt it, and set the fillet skin-down in a hot pan with a little oil. Leave it alone for six minutes. Flip for thirty seconds. The skin should crackle when a fork taps it.

Roast portions at 425°F for about ten minutes. Serve over rice with cucumber, avocado, and a sauce of mayo, soy, and hot sauce. Weeknight food that uses one portion per person.

Lay smoked sockeye on a board with lemon wedges, capers, sliced red onion, and cucumber. Add crackers or bagels and cream cheese. Set it out cold and let people build their own.
Time: 15 minutes. Serves: one fillet feeds a family at a meal. Cut: one whole skin-on sockeye fillet from a 10 lb or 20 lb box.
Ingredients:
Thaw the fillet in the fridge overnight. Keep the pack sealed while it thaws. Take the fillet out 15 minutes before cooking.
Dry the skin with a paper towel. Wet skin steams in the pan. Dry skin crisps. Salt the skin side. Salt the flesh side.
Heat the oil in a heavy pan over medium-high heat. Lay the fillet in skin down. Press it flat for ten seconds with a spatula. The fillet curls at first. The press keeps the skin on the pan.
Leave the fillet alone for six minutes. The flesh turns opaque from the bottom up. Watch the side of the fillet. Cook until the opaque line reaches two-thirds of the way up.
Flip the fillet once. Cook the flesh side for 30 seconds. Take the pan off the heat. Rest the fish for two minutes.
Serve skin up. Squeeze lemon over the plate. Tap the skin with a fork. A crisp skin gives a clear crackle.
Time: 25 minutes. Serves: one portion per person. Cut: sockeye portions from a 5 lb or 10 lb box.
Ingredients:
Start the rice first. Rice takes the longest of anything in this recipe. Keep it warm while the fish cooks.
Heat the oven to 425°F. Pat each portion dry. Salt the portions on both sides. Set them on a lined baking sheet, skin side down.
Roast the portions for about ten minutes. The flesh flakes at the thick end when a fork turns in it. Take the fish out at that point. Overcooked sockeye dries fast.
Stir the mayonnaise, the soy sauce, and the hot sauce in a small bowl. Taste the sauce once. Add hot sauce if the bowl needs more heat.
Build each bowl in order. Rice goes in first. A portion goes on the rice. Cucumber and avocado go beside the fish. Spoon the sauce over the top.
Leftover portions flake into the same bowls the next day. Flake the cold fish with a fork. The bowl needs no reheating of the fish itself.
Time: 10 minutes. Cooking: none. Cut: smoked sockeye from a 1 lb pack or a 2 lb gift box.
Ingredients:
Thaw the smoked sockeye in the fridge. Keep the pack sealed until you build the board. Smoked fish dries out in open air.
Lay the slices on a board in loose folds. Leave space between the folds. Tight packing tears the slices when guests serve themselves.
Set the lemon wedges at one end of the board. Put the capers in a small pile. Fan the red onion slices beside the capers. Lay the cucumber along the other end.
Put the cream cheese on the board with a spreader. Add the crackers or bagels last. Bread dries out if it sits out first.
Serve the board cold. Guests build their own pieces. A bagel takes cream cheese first, then fish, then onion and capers. A cracker takes fish and a squeeze of lemon.
Put leftover fish back in the fridge in a sealed container. Eat it within the time printed on the package. Smoked sockeye also flakes over scrambled eggs the next morning.
Start with the thaw. Every recipe here assumes fish thawed in the fridge overnight. Keep the pack sealed during the thaw. Set the pack on a plate to catch drips.
Dry fish before heat touches it. A wet fillet steams in a pan. A wet portion steams in an oven. Pat the surface with a paper towel. Salt after drying. Salt on a wet surface melts and runs off.
Sockeye cooks fast. Fillets take about six minutes on the skin side. Portions take about ten minutes in a hot oven. The fish is done when the flesh flakes at the thick end and the center still looks moist.
Pull the fish early rather than late. A rested fillet keeps cooking for a minute on the plate. Dry sockeye cannot be fixed with sauce. Moist sockeye needs nothing on top of it.
Leftovers keep for the next day in the fridge. Flake cold fillet over rice. Flake cold portions into a salad. Cold smoked sockeye goes back on a board as-is.
The fish itself came from Bristol Bay. It was flash frozen soon after harvest. Treat the cooking as the short part of a long trip. The trip started in Igiak, Alaska, in summer 2027.
Keep a thaw rhythm once your box lands. Pick the next pack when you clear the dinner dishes. The fridge does the thaw overnight. Dinner the next day takes fifteen minutes of work at most.
