The Fishery

Escapement, in plain English

Enough sockeye must get upriver to spawn. Alaska counts those fish in season. That count sets how much fishing happens.

Move a sealed fillet to the fridge the night before. Cook it the next day.

Ordering for August 2027 is open

Ordering opened this fall. Orders close at the end of June 2027. Every order ships in August 2027.

The delay is the product. Bristol Bay sockeye are caught in summer. Boone sells the summer 2027 catch. A box ordered today waits for fish that are still in the ocean.

Joseph Montecuco fishes out of Igiak, Alaska. His season fills these orders. The catch is flash frozen soon after harvest. Boxes pack after the season ends.

The shop page holds six boxes. Fillets come in a 10 lb box at $215 and a 20 lb box at $410. Portions come in a 5 lb box at $125 and a 10 lb box at $235. Smoked sockeye comes in a 1 lb pack at $38 and a 2 lb gift box at $85.

Checkout asks for a delivery method. Door delivery costs $29 per order. Spokane pickup costs nothing. Pickup orders wait in Spokane in August 2027.

Checkout returns an order number. Keep the number. The Track Delivery page reads it. Status sits at reserved until the season starts.

Order early if your freezer plan is set. Order by the end of June 2027 at the latest. The boats fish after that date. A missed deadline waits a full year for the next run.

Escapement, in plain English

Escapement is a count. Alaska counts sockeye that pass the fishing grounds in Bristol Bay. Those fish reach the rivers. Those fish spawn.

The word sounds technical. The idea is simple. Some fish must get through. The run depends on the fish that get through.

Sockeye spawn in the rivers and lakes behind the bay. Their young grow there. The young fish go to the ocean. Adults come back years later. A strong spawning year feeds a strong return year.

Managers watch the count during the season. The count has a goal for each river system. Fishing is held while the count climbs. Fishing opens after the goal is met.

That order is why Bristol Bay still holds the largest wild sockeye run in the world. The spawning fish go first. The harvest takes what the rivers can spare. The rule has held for generations of fish.

Boone fishes inside that system. Joseph fishes out of Igiak after escapement is met. The sockeye in a Boone box come from a run that already sent its spawners upriver.

A buyer never sees the count. The count still shapes the box. It sets the season start. It sets the size of the harvest. It keeps next summer's run on the calendar.

Thawing sockeye in the fridge

A Boone box lands in August 2027. The packs go into a home freezer that day. The freezer holds the fish until a cooking day comes.

Thaw in the fridge. Move one sealed pack from the freezer to the fridge the night before you cook. A fillet thaws overnight. A portion thaws overnight. Smoked sockeye thaws overnight.

Keep the seal on during the thaw. The seal holds the moisture in the fish. It also keeps fridge smells off the flesh. Set the pack on a plate. A thawing pack can drip.

Cook the fish the next day. Thawed sockeye waits poorly. A second day in the fridge dulls the texture. Plan the meal when you move the pack.

Thaw one pack at a time. The rest of the box stays frozen. A 10 lb box feeds a household across many weeks this way. Each meal starts with one pack and one overnight thaw.

Smoked sockeye follows the same thaw. It needs no cooking after that. Keep the opened pack in the fridge. Eat it within the time printed on the package.

Skip the counter thaw. Fish left on a counter warms unevenly. The outside reaches room temperature while the middle stays frozen. The fridge thaw is slower. The fridge thaw is even.

What flash freezing does

Boone flash freezes sockeye soon after harvest. The speed of that freeze shapes the fish you cook months later. This post walks through the mechanics in plain terms.

Fish flesh holds water inside its cells. Freezing turns that water to ice. A slow freeze grows large ice crystals. Large crystals push through cell walls. A thawed fillet then leaks that water into the pan.

A fast freeze grows small crystals. Small crystals sit inside the cells. The walls hold. A thawed fillet keeps its water. The flesh cooks firm and moist.

Timing matters as much as speed. Freezing soon after harvest starts with fresh fish. The fish goes into the cold in the state it left the water. No days of storage sit between the catch and the freeze.

Vacuum sealing follows the freeze. The seal removes the air around each pack. Air in a freezer dries exposed surfaces over months. Sealed packs come out of a home freezer in the condition they went in.

The box ships in August 2027 with the fish still frozen hard. Your freezer holds that state until a cooking day. The overnight fridge thaw then does the last step slowly. Each stage protects the one before it.
