His story, in his words

Joseph's story will be added by Boone Seafoods.

What Boone sells

Boone sells sockeye only. The menu is fillets. The menu is portions. The menu is smoked sockeye. No other fish goes in a Boone box.

Fillets are whole and skin-on. A 10 lb box costs $215. A 20 lb box costs $410. A 10 lb box holds about seven to nine fillets.

Portions are cut to single servings. A 10 lb box costs $235. A 5 lb starter box costs $125. One portion feeds one person at a meal.

Smoked sockeye is ready to eat. A 1 lb pack costs $38. A 2 lb gift box costs $85. Smoked sockeye needs no cooking.

Every catch is flash frozen soon after harvest. Every pack is vacuum sealed. The weight printed on the box is the weight of fish inside.

A Christian company

Boone Seafoods is a Christian company. Joseph Montecuco runs it. The company sells one fish from one bay.

The practices on this page are plain. Boxes list the weight inside. Orders list the August 2027 ship date. Prices sit on the shop page where a buyer can read them before checkout.

The order window and the season

Orders are open now. Orders close at the end of June 2027. The Bristol Bay season runs in summer 2027.

Joseph fishes that season out of Igiak. The catch fills the orders taken through June. Boxes ship in August 2027, after the season ends.

Door delivery costs $29 per order. Spokane pickup is free. Pickup orders are ready in Spokane in August 2027.

The cycle repeats each year. One run comes back to Bristol Bay each summer. Orders take that run. August ships that run.

Bristol Bay, where Joseph fishes

Bristol Bay is in southwest Alaska. The bay holds the largest wild sockeye run in the world. Sockeye return there every summer.

The water is cold. Sockeye feed on krill in that water. Sockeye feed on zooplankton. The diet colors the flesh deep red. The cold water keeps the texture firm.

Alaska manages the bay by escapement. Fish pass the fishing grounds and reach the rivers first. Those fish spawn. Fishing opens after the spawning count is met.

Joseph fishes out of Igiak, inside that system. The fish he catches are the fish Boone sells. The catch is flash frozen soon after harvest.

From Igiak to a freezer at home

The path is short on paper. Joseph catches sockeye in summer 2027. The catch is frozen and vacuum sealed in Alaska. Boxes ship in August 2027.

A door order lands at a home address. A pickup order waits in Spokane. Both orders hold the same fish from the same season.

At home, the box goes into a freezer the day it arrives. A pack thaws in the fridge the night before cooking. Sockeye cooks fast. A portion roasts in about ten minutes. A fillet sears skin down in about six minutes in a hot pan.

Questions about Boone

Joseph Montecuco runs Boone Seafoods. He fishes the sockeye himself out of Igiak, Alaska.

What fish does Boone sell?

Sockeye only. Boone sells fillets. Boone sells portions. Boone sells smoked sockeye.

Where does the fish ship?

The year at Boone

Fall and winter are order months. Households reserve boxes on this site. Orders build through the spring. The list closes at the end of June 2027.

Summer is fishing. Joseph works the season out of Igiak. The bay fills with returning sockeye. Alaska counts escapement as the fish move. The catch comes after the spawning count is met.

The catch is flash frozen soon after harvest. Packs are vacuum sealed. The frozen fish waits out the rest of the season in storage.

August is shipping month. Door orders go out frozen. Spokane pickup orders are set out for their week. Kitchens across the country start cooking Bristol Bay sockeye from that month on.

Then the cycle rests. The rivers hold the next generation of fish. Orders open again for the next summer run.

What a buyer should know before ordering

The fish is sockeye only. A buyer who wants a mixed seafood box will not find one here. Boone sells one fish, caught in one bay, in one season.

The ship date is August 2027. A buyer who needs salmon next week should buy at a local counter instead. Boone sells a season, and a season has dates.

The weight is the fish weight. A 10 lb box holds 10 lb of sockeye. Portions divide that weight into single servings. Fillets divide it into whole pieces. Smoked packs divide it into ready-to-eat slices.

Storage is simple. Keep the box frozen. Thaw one sealed pack at a time in the fridge. Cook the fish the next day. The freezer does the long work between August and your last winter fillet.

Why one fish

Boone could sell other fish. The site lists none. Sockeye from Bristol Bay is the whole business, and Joseph fishes that run himself.

One fish means one season to learn well. It means one set of dates for every customer. It means the man who runs the company can answer for every box, because every box came from water he fishes.

The shop page is short for the same reason. Fillets, portions, and smoked sockeye cover the ways a household eats salmon. Weight is the only other choice. Boone keeps it at that.
