Alaska manages Bristol Bay by escapement. Fish must pass the fishing grounds and reach the rivers to spawn. Fishing opens after that count is met.

About Bristol Bay salmon

What is in a Boone box

Fillets are whole and skin-on. A 10 lb box of fillets holds about seven to nine fillets. A 20 lb box holds about twice that count.

Portions are cut to single servings. A 10 lb box holds portions. A 5 lb box holds starter portions. One portion feeds one person at a meal.

Smoked sockeye comes ready to eat. The 1 lb pack suits a single household. The 2 lb gift box is packed for giving.

Every box is flash frozen. Every pack is vacuum sealed. The weight on the box is the weight of fish inside the box.

Storing the fish at home

Put the box in your freezer the day it arrives. Keep the packs sealed until the day you cook. Vacuum sealing keeps air off the fish. Air dries frozen fish out over time.

Thaw a pack in the fridge. Move it down from the freezer the night before you cook. Leave the pack sealed while it thaws. Cook the fish the next day.

Smoked sockeye needs no cooking. Keep it frozen until you want it. Move it to the fridge to thaw. Put it back in the fridge after opening. Eat it within the time printed on the package.
